  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • chopped pecans - 1 c

  • flour - 2 c
  • grated carrots - 3 c
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • cooking oil
  • stick margarine, softened - 1 item
  • box powdered sugar, sifted - 1 item

How to make carrot cake:

Icing:1 (8 oz.) pkg. cream cheese1 stick margarine, softened1 box powdered sugar, sifted2 tsp. vanilla1 c. chopped pecans Mix oil and sugar until well blended. Add beaten eggs. Sift together flour, cinnamon, soda and baking powder. Add grated carrots, a little at a time. Bake in a floured pan (9 x 11-inch or two round pans) for 35 to 40 minutes at 350°. Spread with icing.
