Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1/4 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- grated carrots - 2 c
- baking soda - 1 tsp
- vegetable oil
- stick butter, melted - 1 item
- allspice - 1/2 tsp
- crushed pineapple, drained - 1 c
- Add to oil mixture
How to make carrot cake:
Mix together sugar and oil; stir together dry ingredients. Add to oil mixture. Blend in carrots, pineapple, nuts, eggs and vanilla.Grease and flour 13 x 9-inch pan or three regular cake pans. Spoon in batter, leveling top. Bake in preheated 375° oven for approximately 30 to 40 minutes or until toothpick inserted in center comes out clean. Let cake cool. Spread with Cream Cheese Frosting.Cream Cheese Frosting:1 lb. box confectioners sugar1 (8 oz.) pkg. cream cheese1 stick butter, melted2 tsp. vanilla To prepare frosting, combine sugar with cream cheese, butter and vanilla. Beat until smooth. Spread on cooled cake. For best flavor, allow cake to sit in cool place a few days.
