  • grated carrots - 3 c
  • baking soda - 2 tsp
  • vegetable oil
  • chopped nuts optional - 1 c
  • box confectioners sugar - 1 item
  • Stir in oil and add eggs, one at a time, mixing well after each addition

How to make carrot cake:

Sift sugar, flour, soda, salt and cinnamon. Stir in oil and add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into floured and greased 10 to 12-inch tube pan.Cream Cheese Icing:1 c. melted butter, cooled1 (8 oz.) pkg. cream cheese1 tsp. vanilla1 box confectioners sugar Combine cream cheese, butter and vanilla. Add sifted sugar slowly, beating until smooth. Spread on cake.
