- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1 tsp
- flour - 2 c
- grated carrots - 3 c
- baking soda - 2 tsp
- vegetable oil
- chopped nuts optional - 1 c
- box confectioners sugar - 1 item
- Stir in oil and add eggs, one at a time, mixing well after each addition
How to make carrot cake:
Sift sugar, flour, soda, salt and cinnamon. Stir in oil and add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into floured and greased 10 to 12-inch tube pan.Cream Cheese Icing:1 c. melted butter, cooled1 (8 oz.) pkg. cream cheese1 tsp. vanilla1 box confectioners sugar Combine cream cheese, butter and vanilla.
