Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • cream cheese - 4 oz
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • butter - 1/4 lb
  • oil
  • confectioners sugar - 2 c
  • baking soda - 1 tsp
  • chopped walnuts - 1 c
  • plus 1 Tbsp - 2 c
  • beaten eggs - 4 item
  • finely chopped carrots - 2 c
  • drained crushed pineapple - 1 c

How to make carrot cake:

Combine flour, sugar, baking soda, cinnamon and salt. Add eggs, oil and vanilla; beat 2 minutes. Blend in pineapple, carrots and walnuts. Bake at 350° for 40 to 45 minutes. Icing: Combine butter, cream cheese, vanilla and confectioners sugar.
