  • sugar - 1 c
  • cream cheese - 1 (8
  • eggs - 4 item
  • vanilla - 2 tsp
  • chopped pecans - 1/2 c
  • salt - 1 tsp
  • flour - 2 c
  • butter - 4 Tbsp
  • oil
  • confectioners sugar
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • carrots, grated 3 c - 1 lb

How to make carrot cake:

Frosting:2 c. confectioners sugar1 (8 oz.) cream cheese4 Tbsp. butter2 tsp. vanilla Combine sugar and oil; beat well. Add eggs, one at a time. Sift together dry ingredients; add to sugar and oil. Add carrots and pecans; blend well.

Oil 3 (9-inch) cake pans. Line with waxed paper. Oil the paper. Bake 45 minutes at 325°. Test for doneness. Turn onto wire racks. Allow to fully cool.

Mix all the ingredients for the frosting and spread over between each layer and over the cake.
