- vanilla - 2 tsp
- chopped pecans - 1/2 c
- salt - 1 tsp
- flour - 2 c
- butter - 4 Tbsp
- oil
- confectioners sugar
- baking powder - 2 tsp
- baking soda - 2 tsp
- carrots, grated 3 c - 1 lb
How to make carrot cake:
Frosting:2 c. confectioners sugar1 (8 oz.) cream cheese4 Tbsp. butter2 tsp. vanilla Combine sugar and oil; beat well. Add eggs, one at a time. Sift together dry ingredients; add to sugar and oil. Add carrots and pecans; blend well.Oil 3 (9-inch) cake pans. Line with waxed paper. Oil the paper. Bake 45 minutes at 325°. Test for doneness. Turn onto wire racks. Allow to fully cool.
Mix all the ingredients for the frosting and spread over between each layer and over the cake.
