Ingredients/Components

  • sugar - 2 c
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • coconut - 1 c
  • grated carrots - 2 c
  • baking soda - 1 tsp
  • powdered sugar - 3 c
  • margarine - 6 Tbsp
  • ground cinnamon - 2 tsp
  • oil Crisco
  • well drained crushed pineapple - 1 c
  • Add eggs, oil, carrots and vanilla

How to make carrot cake:

Mix dry ingredients. Add eggs, oil, carrots and vanilla. Beat until well combined. Stir in pineapple, coconut and nuts. Pour in a 13 x 9-inch baking pan. Bake at 350° for 50 to 60 minutes. Cool, frost and enjoy!Cream Cheese Frosting:2 pkg. (3 oz. each) cream cheese3 c. powdered sugar6 Tbsp. margarine1 tsp. vanilla Cream together cheese and powdered sugar. Add margarine and vanilla.
