  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • flour
  • oil - 2/3 c
  • soda - 1 tsp
  • grated carrots - 1 c
  • baking powder - 1 tsp
  • powdered sugar - 2 c
  • grated zucchini - 1 c
  • margarine - 3 Tbsp
  • currants or raisins - 1/2 c
  • Gradually beat in oil; add dry ingredients

How to make zucchini carrot cake:

Beat eggs and sugar until frothy. Gradually beat in oil; add dry ingredients. Beat at high speed 4 minutes. Add carrots, zucchini, nuts and currants or raisins. Pour in greased pan. Bake at 350° for 35 minutes.Frosting:3 oz. pkg. cream cheese3 Tbsp. margarine1 tsp. vanilla2 c. powdered sugar Blend well. Frost cooled cake.
