Ingredients/Components

  • eggs - 4 item
  • tsp salt - 1 item
  • c sugar - 2 item
  • c flour - 2 item
  • tsp baking powder - 2 item
  • c oil - 1-1/2 item
  • tsp cinnamon - 2 item
  • tsp baking soda - 2 item
  • c powdered sugar - 2-1/2 item
  • tsp clear vanilla - 1 item
  • c carrots, finely grated - 3 item
  • Pour into 2 buttered and floured 8 inch round cake pans
  • tbsp butter, softened - 6 item

How to make carrot cake:

Beat all ingredients together until well mixed. Pour into 2 buttered and floured 8 inch round cake pans. Bake at 350° for 35 minutes until toothpick comes out clean. Let cool and cover with icing (recipe to follow).Cream Cheese Icing:8 oz cream cheese6 tbsp butter, softened2-1/2 c powdered sugar1 tsp clear vanilla Mix all ingredients together.
