Ingredients/Components

  • eggs - 4 item
  • sugar - 2 c
  • oil
  • carrots, grated - 3 c
  • plain flour - 2 c
  • cinnamon - 1 tsp
  • baking soda - 2 tsp
  • salt - 1 tsp
  • cream cheese
  • stick oleo - 1 item
  • box confectioners sugar - 1 item
  • vanilla extract - 1 tsp

How to make carrot cake:

Icing:8 oz. cream cheese1 stick oleo1 box confectioners sugar1 tsp. vanilla extract Cream together eggs, sugar and oil. Add carrots and dry ingredients that have been sifted together. Mix well. Bake in layers (I bake 4) for 30 minutes at 350°. Cool before icing.

Icing: Cream together cream cheese and oleo. Add sugar and vanilla. Chopped pecans may also be added.
