Ingredients/Components

  • sugar
  • vanilla - 1 Tbsp
  • milk - 1/2 c
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • all-purpose flour
  • cooking oil - 1/2 c
  • shredded carrots - 2 c
  • beaten eggs - 3 item
  • ground cinnamon - 1 Tbsp

How to make carrot bread:

Combine flour, sugar, cinnamon, soda, baking powder and salt in a bowl. Combine oil, milk, eggs and vanilla. Add to flour mixture; stir just until combined. Stir in carrots and nuts. Pour into 2 greased 7 1/2 x 3 1/2 x 2-inch loaf pans. Bake in 300° oven for 40 to 50 minutes. Remove from pan and cool on a wire rack. Wrap and store overnight or can be frozen for later use. Makes 2 loaves.
