  • sugar - 2 c
  • cinnamon - 3 tsp
  • vanilla - 2 tsp
  • pkg - 1 oz
  • salt - 3/4 tsp
  • flour - 2 c
  • eggs, beaten - 4 item
  • baking soda - 2 tsp
  • powdered sugar
  • cube margarine - 1 item
  • Wesson oil
  • mashed carrots

How to make carrot bars:

Frosting:2 c. powdered sugar1 cube margarine1 (8 oz.) pkg. cream cheese2 tsp. vanilla Combine eggs, oil and carrots in a large bowl and mix well. Add dry ingredients which have been sifted together. Mix all well; spread in two 9 x 13 x 2-inch greased pans. Bake at 350° for 25 to 30 minutes; cool, then frost.

Frosting: Mix well, spread on cooled bars.

Helen Cohen says she added 1 cup chopped walnuts and weighed carrots; she used about 1 pound sliced to cook.
