Carrot bars
Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 4 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- soda - 2 tsp
- powdered sugar - 1-3/4 c
- cooking oil - 1-1/4 c
- butter or margarine, softened - 2 Tbsp
- ground or grated carrots - 3 c
- Add 4 well beaten eggs
How to make carrot bars:
Combine oil and sugar; mix well. Add 4 well beaten eggs. Sift together flour, salt, soda and cinnamon. Add this to sugar, egg and oil mixture and mix well. Fold in 3 cups of carrots. Grease a large cookie sheet (with sides) and flour. Pour in batter to about 1/2 inch thickness. Bake at 350 degrees for 25 to 30 minutes or until knife inserted in center comes out clean.Icing:8 oz. cream cheese, softened2 Tbsp. butter or margarine, softened1-3/4 c. powdered sugar1 tsp. vanilla Mix icing ingredients well and frost cooled bars.(These freeze well.)
