Caramel sweet potatoes
Ingredients/Components
- cinnamon - 3/4 tsp
- butter or margarine - 1 c
- salt - 1/4 tsp
- light corn syrup - 1/2 c
- cans whole sweet potatoes, drained or 4 cooked sweet potatoes - 2 oz
- Plantation brown sugar, packed - 3/4 c
How to make caramel sweet potatoes:
Preheat oven to 350°. Arrange sweet potatoes in baking dish. In small saucepan over medium heat, combine remaining ingredients; heat to boiling; reduce heat to low and simmer 5 minutes, stirring occasionally. Pour mixture over sweet potatoes. Bake 20 minutes, or until potatoes are well glazed, basting often. To serve, spoon syrup over potatoes. Serves about 6.Recipe categories: Side dish, Potato, Yam/sweet potato.
