  • margarine - 1 c
  • brown sugar - 2 c
  • salt - 1 tsp
  • light corn syrup - 1/2 c
  • baking soda - 1/2 tsp
  • vanilla - 1 tsp
  • popped popcorn plain - 6 qt

How to make caramel corn:

Bring margarine, sugar, salt and corn syrup to a boil, stirring constantly. Then boil without stirring for 5 minutes. Remove from heat; add soda and vanilla and pour over popcorn. Mix and turn into 2 large buttered baking pans. Bake at 250° for 1 hour, stirring every 15 minutes. (Optional: peanuts can be added and stirred in the last 30 minutes of baking.)
