Caramel corn
Ingredients/Components
- salt - 1 tsp
- baking soda - 1 tsp
- margarine - 1/2 lb
- light corn syrup - 1/2 c
- cream of tartar - 1/4 tsp
- light brown sugar - 2 c
- freshly popped popcorn - 6 qt
How to make caramel corn:
In a 2 1/2-quart pan, combine first 5 ingredients. Heat to boiling, stirring constantly. Boil rapidly to hard ball stage (250°). Remove from heat, stir in soda quickly. Stir thoroughly and pour over popcorn. Stir gently until all kernels are coated. Bake for 1 hour, stirring 2 or 3 times while in the oven. Turn out onto waxed paper, spread apart and cool. Store in tightly covered container. Makes 6 quarts.Note: Similar recipes were contributed by Frances Nunez and Mary Byrholdt.
