Ingredients/Components

  • flour
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • salad oil - 2/3 c
  • grated Cheddar cheese
  • medium bell pepper - 1/2 item
  • small can cream-style corn - 1 item
  • self-rising cornmeal mix
  • to 3 regular hot peppers - 2 item
  • hot sausage, fried - 1 lb

How to make cajun cornbread:

Chop or dice bell peppers. Place in small pan with water and cook in high heat for 4 minutes. Drain and cool. Fry sausage and let drain. Mix cornmeal and flour. Add buttermilk, oil, eggs and corn. Beat and mix well. Stir in onions, peppers and green peppers (bell). Grease a 9 x 14-inch baking dish. Warm dish, then mix in half of batter, then top with half of sausage and cheese. Repeat. Start with batter layer again. Bake at 375° for 45 minutes or until done. Yields 8 servings.
