Ingredients/Components

  • eggs - 2 item
  • cornstarch - 2 tsp
  • heavy cream - 1/2 c
  • clove garlic, minced - 1 item
  • chopped fresh parsley - 4 Tbsp
  • Parmesan cheese - 1/4 c
  • salt and pepper - 1 item
  • tomato sauce - 1/3 c
  • large onion, chopped - 1 item
  • uncooked rice - 1/2 c
  • ground chuck
  • juice of 2 lemons
  • large cabbage head - 1 item
  • ground pork - 1/2 lb
  • Remove and cool; separate leaves
  • cooking liquid from pan - 1 item

How to make cabbage rolls:

Core and parboil cabbage, head down, for 10 to 15 minutes, covered in 2 cups salted water. Remove and cool; separate leaves. Mix remaining ingredients together until well blended. On each cabbage leaf, place one tablespoon meat filling. Roll loosely, folding in sides as you roll.

Arrange in heavy-bottomed pot, seam side down. Pour 3 cups hot water over all; sprinkle juice of half lemon, leaving remaining lemon rind in the pot. Place a few pats of butter on top of rolls. Bring to a boil, then reduce heat and gently simmer, covered, for 45 to 50 minutes or until rice is tender. Serve with Egg-Lemon Sauce.Egg-Lemon Sauce:4 eggs1/2 c. heavy cream cooking liquid from pan juice of 2 lemons2 tsp. cornstarch Beat eggs well with wire whisk. Gradually add lemon juice, cream, cornstarch and cooking liquid, beating continuously until smooth and thickened. Pour sauce over stuffed cabbage and serve immediately.
