  • water - 1 c
  • ground beef - 1 lb
  • spaghetti sauce - 1 qt
  • elbow macaroni, uncooked
  • shredded Mozzarella cheese I use Colby - 1 c

How to make busy day casserole:

Crumble the beef into a 3-quart casserole and cook in microwave on full power 4 to 5 minutes or until beef is no longer pink, stirring halfway through cooking time. Drain beef. Mix in sauce, water and macaroni. Cool, covered at full power 12 to 14 minutes, until macaroni is tender (you may have to add time if your microwave oven is less than 700 watts), stirring and rotating dish halfway through time. Sprinkle cheese on top of casserole. Let stand, covered, 4 to 6 minutes before serving. Yields 6 servings.
