Ingredients/Components

  • milk - 2 c
  • butter or margarine - 2 Tbsp
  • salt - 1/2 tsp
  • all-purpose flour - 3 Tbsp
  • grated Parmesan cheese - 1/4 c
  • chopped onions - 1/2 c
  • fine dry bread crumbs - 1/4 c
  • white pepper - 1/8 tsp
  • melted butter or margarine - 2 Tbsp
  • dash of nutmeg - 1 item
  • grated Swiss cheese - 1/4 c
  • broccoli, cut into 2-inch flowerets - 1 bunch

How to make broccoli with mornay sauce:

Cook broccoli in boiling, salted water for 5 minutes or until almost tender. Refresh under cold water. Drain well. In medium saucepan, saute onion in butter for 3 minutes. Add flour. Stir constantly. Cook over medium-high heat, whisking constantly for 5 minutes. Mixture will thicken. Stir in Swiss cheese, salt, pepper and nutmeg. Coat bottom of 7 to 7 1/2-quart casserole dish with sauce. Arrange broccoli over sauce. Pour remaining sauce over broccoli. Combine Parmesan cheese and bread crumbs. Sprinkle over casserole. Drizzle with melted butter. Bake, uncovered, at 375° for 20 to 25 minutes
