  • pkg - 2 oz
  • milk - 3 c
  • butter or margarine - 3 Tbsp
  • chicken broth - 5 c
  • finely chopped onion - 3/4 c
  • Velveeta cheese, cubed - 1 lb
  • garlic powder or 1 clove garlic, crushed - 1/4 tsp
  • very thin spaghetti capellini, broken into small pieces - 8 oz

How to make broccoli cheese soup:

In large, 6-quart soup pot, saute onion in butter until transparent. Add chicken broth and spaghetti. Heat for 5 minutes on medium. Add milk, broccoli and garlic. Cook 5 more minutes. Add cheese. Serve when cheese is melted and spaghetti noodles are tender. Add extra broth or milk if soup is too thick.
