Broccoli cheese soup
Ingredients/Components
- salt - 1/2 tsp
- flour - 3 Tbsp
- water
- margarine - 1/4 c
- garlic powder - 1/8 tsp
- pepper - 1/8 tsp
- chopped parsley for garnish - 1 item
- instant nonfat dry milk - 1 c
- can condensed chicken broth undiluted - 1 item
- frozen broccoli, defrosted - 1 pkg
- chopped scallions or grated onions - 1/4 c
- Swiss cheese, shredded 6 oz
How to make broccoli cheese soup:
Combine dry milk, flour and seasonings in a 3-quart heavy pot. Stir in water and condensed chicken broth until smooth. Bring to boil over medium heat. Stir constantly. Boil and stir for 1 minute. Briefly saute onion in margarine. Stir onion mixture and broccoli into thickened mixture. Continue to stir until broccoli is heated. Pour into soup serving bowl. Sprinkle cheese over top.
