  • small amount of milk - 1 item
  • box Velveeta cheese - 1 oz
  • chicken breast per person - 1 item
  • frozen broccoli or can use fresh - 1 pkg
  • Cheese Sauce:1 can cream of chicken soup

How to make broccoli and chicken casserole:

Cheese Sauce:1 can cream of chicken soup1 (8 oz.) box Velveeta cheese1 c. Hellmann's mayonnaise (use only this) small amount of milk Boil chicken breasts; cool in advance and remove from bone. Save enough broth from chicken and steam fresh broccoli in the juice. If using frozen broccoli, steam in chicken broth juice just enough to thaw (3 to 4 minutes).

Cook cheese sauce ingredients together in saucepan slowly (low heat). Add enough milk; sauce should be medium thick.

Place broccoli on the bottom of casserole. Place diced chicken on top of broccoli. Pour cheese sauce over broccoli and chicken. Bake at 350° for approximately 30 to 45 minutes. You may add bread crumbs on the top if you like.
