Broccoli and cheese soup
Ingredients/Components
- pkg - 10 oz
- milk - 2 c
- salt - 1/2 tsp
- flour - 3 Tbsp
- water
- margarine or butter - 2 Tbsp
- pepper - 1/8 tsp
- finely chopped onion - 2 Tbsp
- chicken bouillon cubes - 2 item
- shredded American cheese - 1 c
How to make broccoli and cheese soup:
In large saucepan, cook onion in margarine until tender. Stir in flour, salt and pepper until well blended. Add milk all at once. Cook until thickened, stirring constantly, about 1 minutes. Add cheese and stir until melted. Remove from heat.In medium saucepan, dissolve bouillon cubes in water. Bring to a boil, add broccoli and cook according to package directions; do not drain. Add broccoli and cooking liquid to cheese mixture; stir until well blended.
Tip: To make Ham and Broccoli Cheese Soup, prepare as directed above except add 1 cup cubed cooked ham to cheese mixture. To make Cauliflower Cheese Soup, prepare as directed above except substitute 10 oz. package of frozen cauliflower for broccoli. Stir 1 tablespoon parsley flakes into cheese mixture.
