Ingredients/Components
- oil - 2 Tbsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- raisins optional - 1/2 c
- honey - 1/2 c
- egg, beaten - 1 item
- whole wheat flour - 1 c
- unprocessed bran
- milk or plain yogurt - 3/4 c
How to make bran muffins:
Stir together the bran, flour, raisins, soda, baking powder and baking soda; set aside. Blend milk, honey, oil and egg. Add these to dry ingredients. Stir just until moistened. Spoon into greased muffin pan. Bake at 400° for 15 minutes or until muffins pull away from sides of pan.Analysis: Contains approximately 4.7 grams of fiber per muffin when made with raisins, 104 mg sodium, 27 grams carbohydrates, 3.3 grams fat or 20% total calories, 3.1 grams protein and 150 calories.
