Boston brown bread
Ingredients/Components
- salt - 1/2 tsp
- baking soda - 1 tsp
- molasses - 3/8 c
- whole wheat flour - 1/2 c
- sour milk - 1 c
- corn meal - 1/2 c
- rye meal or all-purpose flour - 1/2 c
How to make boston brown bread:
Mix the dry ingredients. Stir in the liquids and mix well. Grease a mold*. Fill not more than 2/3 full. Put on the cover. Place on a rack in a deep kettle. Add boiling water to come halfway up around the mold. Cover. Steam 3 to 3 1/2 hours, keeping water boiling. Add more water as necessary. Run a knife around the inside of the mold to loosen the loaf to remove it.I double this recipe and freeze one loaf.
*A 1 pound coffee can makes a good mold. Use aluminum foil and rubber band for the cover.
