Boiled raisin cake
Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- eggs - 2 item
- salt - 1/2 tsp
- water - 3 c
- nutmeg - 1/2 tsp
- baking soda - 1 tsp
- nuts optional - 1/2 c
- butter or oleo - 1/2 c
- seedless raisins - 3 c
- sifted enriched flour - 2 c
How to make boiled raisin cake:
Cover raisins with water; bring to a boil and simmer 30 minutes. Drain raisins, reserving 1 cup liquid. Cool raisins and liquid thoroughly. Sift together flour, soda, salt and spice. Cream together shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold raisins into batter. Blend in flour mixture alternately with raisin liquid, beating well after each addition. Bake at 350° for 60 to 70 minutes in a 9 x 13-inch pan.
