Blueberry quick bread
Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1 c
- salt - 1/2 tsp
- chopped nuts - 3/4 c
- flour
- butter - 6 Tbsp
- baking powder - 3 tsp
- fresh or frozen blueberries
How to make blueberry quick bread:
Mix dry ingredients together and cut in the margarine with pastry blender. Combine, then add all at once the eggs, milk and vanilla. Stir until flour is just moistened. Mixture should be lumpy. Add berries and nuts. Mix well.Pour batter into greased and floured 5 x 9-inch loaf pan. Bake at 350° for 1 hour and 20 minutes or until a toothpick inserted comes out clean. Allow the loaf to cool a few minutes before removing from pan. Makes 1 large loaf.
