Ingredients/Components

  • packed brown sugar - 3/4 c
  • salt - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • all-purpose flour - 1 c
  • butter, melted - 1/4 c
  • egg, beaten - 1 item
  • quick cooking oats - 1 c
  • fresh or frozen blueberries - 1 c
  • sour milk * - 1 c

How to make blueberry oat muffins:

In bowl, combine oats and milk; let stand a few minutes. In another bowl, combine flour, brown sugar, baking powder, baking soda and salt. Mix well. Stir egg and butter into oat mixture. Add oat mixture all at once to dry ingredients. Stir just until moistened. Gently fold in blueberries; fill well-greased muffin tins 3/4 full. Bake at 400° for 15 to 20 minutes. Yields 12 muffins.

*To sour milk, place 1 tablespoon of white vinegar in a measuring cup and add enough milk to equal 1 cup.
