Best bran muffins
Ingredients/Components
- salt - 1/2 tsp
- buttermilk - 3/4 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- vegetable oil - 1/4 c
- all-purpose flour - 1 c
- quick-cooking oats - 1/2 c
- egg, beaten - 1 item
- whole-wheat flour - 1 c
- All-Bran - 1/2 c
- chopped nuts I use pecans - 1/2 c
- molasses I use Blackstrap - 1/2 c
- can unsweetened, crushed pineapple not drained - 1 oz
How to make best bran muffins:
In a mixing bowl, combine first 7 ingredients. Make a well in the center. Combine the egg, oil, molasses, buttermilk and pineapple. Pour into well; mix until dry ingredients are moistened. Stir in nuts. Coat 18 muffin cups with nonstick cooking spray; fill 2/3 full with batter. Bake at 400° for 12 minutes or until golden brown. Yield: 1 1/2 dozen.
