Beef roll-ups
Ingredients/Components
- Salt and pepper to taste - 1 item
- can mushroom soup - 1 item
- medium size can tomatoes, cut up - 1 item
- c chopped onions - 1/2 item
- T butter or margarine - 2 item
- c finely diced carrots - 1 item
- c finely diced potatoes - 1 item
- T chopped parsley - 2 item
- tsp dill opt - 1/2 item
- cube steaks or 1 1/2 lb round steak, about 1/8 inch thick - 4 item
- T shortening - 2 item
- glass white wine opt - 1/2 item
How to make beef roll-ups:
In a saucepan, saut?© onions in butter. Add carrots, potatoes, 1/2 can of soup, parsley and 1/4 tsp dill. Cook until partially tender. Sprinkle meat with salt and pepper. If using round steak, cut into 4 or 5 pieces and flatten. Place stuffing in center of meat. Roll up, tuck in ends and skewer with toothpicks. Using a skillet, brown roll-ups on all sides in shortening. Remove excess fat. Pour in soup, dill, tomatoes and remaining stuffing. Simmer about an hour, but stir frequently.
