Banana pineapple cake
Ingredients/Components
- unbleached flour - 3 c
- sugar - 1/2 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- salt - 1/2 tsp
- egg substitute - 3/4 c
- corn oil - 1/2 c
- plain nonfat yogurt - 1/2 c
- vanilla - 2 tsp
- mashed ripe bananas 1 lb - 2 c
- can crushed pineapple in own juice - 1 oz
- powdered sugar - 1 Tbsp
How to make banana pineapple cake:
In a mixing bowl, thoroughly stir together the flour, sugar, baking powder, baking soda and salt. In a separate bowl combine the egg substitute, corn oil, yogurt, vanilla, bananas and undrained pineapple. Make a well in the center of the dry ingredients and add liquid ingredients all at once, stirring until well moistened. Pour batter into a 10-inch fluted tube pan, sprayed with nonstick vegetable coating. Bake in preheated 350° oven for 65 to70 minutes or until inserted toothpick in center comes out clean. Cool in pan 15 minutes. Remove from pan and cool on wire rack. Sift 1 tablespoon powdered sugar over top. Serves 16.Recipe categories: Desserts, Cakes, Bananas.
