Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- vanilla - 1 tsp
- salt - 1 tsp
- eggs, beaten - 4 item
- baking powder - 1 Tbsp
- baking soda - 1 Tbsp
- melted butter - 1/2 c
- vegetable oil - 3/4 c
- all-purpose flour - 2 c
- powdered sugar - 8 oz
- chopped walnuts - 1 c
- dash of nutmeg - 1 item
- shredded zucchini - 2 c
- pitted dates - 1 c
- stick oleo, at room temperature - 1 item
- Add remaining ingredients except walnuts and dates
How to make zucchini cake:
Combine vegetable oil, butter, eggs and sugar. Add remaining ingredients except walnuts and dates. Mix well, then add nuts and dates. Bake 30 to 35 minutes at 350°. Makes 3 layers.Icing:8 oz. cream cheese, at room temperature1 stick oleo, at room temperature8 oz. powdered sugar1 tsp. vanilla Mix well, adding a little sugar at a time.
