  • vegetable oil - 3/4 c
  • all-purpose flour - 2 c
  • powdered sugar - 8 oz
  • chopped walnuts - 1 c
  • dash of nutmeg - 1 item
  • shredded zucchini - 2 c
  • pitted dates - 1 c
  • stick oleo, at room temperature - 1 item
  • Add remaining ingredients except walnuts and dates

How to make zucchini cake:

Combine vegetable oil, butter, eggs and sugar. Add remaining ingredients except walnuts and dates. Mix well, then add nuts and dates. Bake 30 to 35 minutes at 350°. Makes 3 layers.Icing:8 oz. cream cheese, at room temperature1 stick oleo, at room temperature8 oz. powdered sugar1 tsp. vanilla Mix well, adding a little sugar at a time. Can add coconut and nuts.
