Ingredients/Components
- sugar
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla
- salt - 1 tsp
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- unbleached flour - 3 c
- chopped walnuts - 2 c
- plus 2 Tbsp - 3/4 c
- walnut oil - 1/4 c
- unpeeled grated zucchini
How to make zucchini bread:
Preheat oven to 350°. Butter or spray with vegetable oil, 2 large loaf pans (9 x 5-inch). Beat the eggs until light. Add the sugar, mixing well. Add the oil, zucchini and vanilla and mix thoroughly. Sift the dry ingredients. Add by the cupful to the egg mixture. Stir until well blended. Add the nuts and walnut oil. Spoon into the pans and bake for approximately 1 hour.
