Banana macadamia nut bread
Ingredients/Components
- butter, softened - 1/2 c
- sugar - 3/4 c
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flaked coconut - 1 c
- baking soda - 1 tsp
- all-purpose flour - 2 c
- grated orange peel - 1 Tbsp
- orange juice - 1/4 c
- mashed ripe bananas - 1 c
- jar coarsely chopped Macadamia nuts - 1 1/2
How to make banana macadamia nut bread:
Heat oven to 350°. In large mixing bowl, combine first 8 ingredients. Beat at low speed, scraping bowl often, until well mixed (2 to 3 minutes). Add bananas and orange juice. Continue beating until well mixed (1 minute). By hand, stir in coconut and nuts. (Batter will be thick.)Spread into 1 greased loaf pan or 3 mini loaf pans. Bake mini loaves 35 to 45 minutes or large loaf pan 60 to 65 minutes or until wooden pick comes out clean. Cool 10 minutes. Remove from pans.
