Ingredients/Components
- eggs - 2 item
- salt - 1 Tbsp
- flour - 5 to
- boiling water - 2 c
- shortening - 1/3 c
- dark molasses - 1/2 c
- cornmeal - 1/2 c
- dry yeast - 2 pkg
How to make anadama bread:
In large bowl, combine yeast and 3 cups flour. Gradually stir cornmeal into boiling water. Add molasses, shortening and salt. Cool to lukewarm. Add to flour/yeast mixture. Add eggs. Beat at low speed for 1/2 minute, scraping bowl constantly. Beat 3 minutes at high speed. By hand, stir in enough remaining flour to make a soft dough.Turn out on floured surface. Knead until smooth, 7 to 10 minutes. Place in greased bowl, turning once to grease surface. Cover. Let rise until double, 1 1/2 hours. Punch down.
Divide dough in half. Let rest, covered, 10 minutes. Shape into loaves. Cover. Let rise until double. Bake at 375° for 40 minutes.
