Applesauce muffins
Ingredients/Components
- whole wheat pastry flour
- baking powder - 2 tsp
- cinnamon - 3/4 tsp
- ginger - 1/4 tsp
- egg, beaten - 1 item
- applesauce - 3/4 c
- honey - 1/2 c
- oil or melted butter - 1/3 c
- apple juice - 1/4 c
- pecans optional - 1/2 c
- raisins optional - 1/2 c
How to make applesauce muffins:
Stir together flour, baking powder, cinnamon and ginger. Combine egg, applesauce, honey, oil and apple juice. Add to flour mixture. Stir just until flour is moistened. The batter should be lumpy. Fold in pecans and/or raisins (optional).Fill 12 greased muffin tins 2/3 full. Bake at 400° for 20 to 25 minutes until lightly browned. Serve warm.
