  • salt - 1/2 tsp
  • all-purpose flour - 1/4 c
  • egg white - 1 item
  • paprika - 1 tsp
  • skim milk - 2 Tbsp
  • grated Parmesan cheese - 1/4 c
  • yellow cornmeal - 1/4 c
  • black pepper - 1/2 tsp
  • catfish fillets - 4 (4

How to make baked catfish:

Combine cornmeal, flour, Parmesan cheese, paprika, salt and black pepper. Set aside. Whisk together egg white and milk. Dip fillets in milk mixture and dredge in cornmeal mixture. Place on a foil-lined baking sheet coated with cooking spray. Coat each fillet lightly with cooking spray. Bake at 350° for 30 minutes or until fish flakes easily when tested with a fork. Yield: 4 servings.
