- skim milk - 2 Tbsp
- grated Parmesan cheese - 1/4 c
- yellow cornmeal - 1/4 c
- black pepper - 1/2 tsp

How to make baked catfish:
Combine cornmeal, flour, Parmesan cheese, paprika, salt and black pepper. Set aside. Whisk together egg white and milk. Dip fillets in milk mixture and dredge in cornmeal mixture. Place on a foil-lined baking sheet coated with cooking spray. Coat each fillet lightly with cooking spray. Bake at 350° for 30 minutes or until fish flakes easily when tested with a fork.
