Ingredients/Components

  • butter - 1/2 c
  • can cream of mushroom soup - 1 item
  • pimento - 1/2 c
  • large can asparagus tips - 1 item
  • grated cheese or 1/2 lb - 2 c
  • cracker crumbs Ritz or soda - 2 c
  • hard-boiled eggs, cut into small pieces - 3 item

How to make asparagus casserole:

Mix cheese, cracker crumbs, liquid from asparagus and 1/4 cup butter. Grease bowl with butter and save the rest for the top of the casserole. Place layer of cheese and cracker mixture in baking dish. Next, a layer of asparagus, then a layer of eggs and pimento. Cover with can of soup. Use rest of cracker mixture to cover top and dot with remaining butter. Bake at 350° for 30 to 40 minutes.
