Ingredients/Components

  • flour - 2 Tbsp
  • butter - 1/4 c
  • water - 1 c
  • chopped onion - 1/2 c
  • chicken broth - 1 c
  • lemon pepper seasoning - 1 tsp
  • milk or cream
  • can asparagus, drained and chopped - 1 item

How to make asparagus bisque:

In large saucepan, combine asparagus, onions, broth, water, butter and lemon pepper seasoning. Cook over medium heat until onions are tender. This will probably take about 10 minutes. Combine flour and 1/4 c. milk. Whisk until smooth. Stir into soup. Add remaining milk or cream. Simmer for about 5 minutes. Process in blender or food processor until smooth. Makes about 4 servings.

Variation: To make crabmeat asparagus bisque, put a tablespoon crabmeat in the bottom of each soup bowl and then add the bisque.
