Ingredients/Components

  • sugar - 1/2 c
  • pkg - 2 oz
  • flour - 3 Tbsp
  • butter - 2 Tbsp
  • hot water - 2 c
  • miniature marshmallows - 3/4 c
  • egg, beaten - 1 item
  • grated Cheddar cheese - 3/4 c
  • cream, whipped - 1 c
  • combined juices - 1 c
  • mixed fruit juices - 1 c
  • can apricots, drained and cut fine save juice - 1 oz
  • can pineapple, crushed and drained save juice - 1 item

How to make apricot salad:

Drain and chill fruit. Dissolve jello in boiling water. Add 1 cup fruit juice (reserve remainder for topping). Set in refrigerator until thickened some. Add fruit and marshmallows. Pour into shallow 9 x 13-inch dish. Chill until set. Mix in saucepan sugar and flour. Add 1 cup mixed juices and egg. Cook until thick, stirring constantly. Add butter. Let cool. Fold in whipped cream. Pour over fruit mixture. Sprinkle with grated Cheddar cheese.
