Apricot salad
Ingredients/Components
- sugar - 1/2 c
- pkg - 2 oz
- flour - 3 Tbsp
- butter - 2 Tbsp
- hot water - 2 c
- miniature marshmallows - 3/4 c
- egg, beaten - 1 item
- grated Cheddar cheese - 3/4 c
- cream, whipped - 1 c
- combined juices - 1 c
- mixed fruit juices - 1 c
- can apricots, drained and cut fine save juice - 1 oz
- can pineapple, crushed and drained save juice - 1 item
How to make apricot salad:
Drain and chill fruit. Dissolve jello in boiling water. Add 1 cup fruit juice (reserve remainder for topping). Set in refrigerator until thickened some. Add fruit and marshmallows. Pour into shallow 9 x 13-inch dish. Chill until set. Mix in saucepan sugar and flour. Add 1 cup mixed juices and egg. Cook until thick, stirring constantly. Add butter. Let cool. Fold in whipped cream. Pour over fruit mixture. Sprinkle with grated Cheddar cheese.Recipe categories: Fruit, Low sodium, Salads.
