Apricot salad
Ingredients/Components
- sugar - 1/2 c
- flour - 1 Tbsp
- butter - 2 Tbsp
- egg, slightly beaten - 1 item
- whipping cream - 1 c
- hot water - 2 c
- miniature marshmallows - 1 c
- grated Cheddar cheese - 3/4 c
- pineapple juice - 1 c
- large can crushed pineapple, drained - 1 item
- orange jello - 2 pkg
- apricot juice - 1 c
- can apricots, drained and chopped - 1 oz
How to make apricot salad:
Keep apricot and pineapple juices separate. Chill fruit. Dissolve jello in hot water. Add apricot juice. Fold in apricots, pineapple and marshmallows. Chill. Combine sugar and flour. Add egg and butter. Add pineapple juice; cook over low heat, stirring constantly until thick. Cool. Fold in whipped cream; spread over jello mixture. Sprinkle with Cheddar cheese.
