Ingredients/Components

  • sugar - 1/2 c
  • pkg - 2 oz
  • flour - 3 Tbsp
  • butter - 2 Tbsp
  • heavy cream, whipped or 1 pkg - 1 c
  • hot water - 2 c
  • miniature marshmallows - 1 c
  • egg, beaten - 1 item
  • large can mandarin oranges - 1 item
  • grated Parmesan cheese optional - 1 item
  • can apricots - 1 oz
  • fruit juices - 2 c
  • large can pineapple optional - 1 item

How to make apricot salad:

Drain apricots and mandarin oranges (and pineapple). Reserve juices. Chop apricots. Dissolve gelatin in hot water; add 1 cup reserved juice with apricots, oranges and marshmallows. Place in 9 x 13-inch dish. Chill until firm. Blend sugar, flour, egg, butter and remaining 1 cup juice. Cook until thickened, stirring constantly. Chill. Fold in whipped cream. Spread over firm gelatin. Chill and serve. Makes 15 servings.

Optional: Sprinkle with Parmesan cheese.
