Apricot salad
Ingredients/Components
- sugar - 1/2 c
- pkg - 1 oz
- butter - 2 Tbsp
- cornstarch - 2 Tbsp
- cold water - 2 c
- boiling water - 2 c
- miniature marshmallows - 2 c
- egg, beaten - 1 item
- bananas, sliced - 2 item
- pineapple juice - 1 c
- 2 can crushed pineapple, drained
- large apricot Jell-O - 1 item
- small container whipped dairy topping - 1 item
How to make apricot salad:
Prepare Jell-O in usual manner. Let cool and add pineapple, bananas and marshmallows. Place in refrigerator to congeal.Cook the pineapple juice, egg, butter, sugar and cornstarch in top of double boiler until thick. Add cream cheese. When cool, fold in dairy topping and spread on top of congealed mixture. Refrigerate until served.
