Ingredients/Components
- sugar - 1 c
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 2 c
- soda - 1/2 tsp
- baking powder - 2 tsp
- shortening - 2 Tbsp
- egg, beaten - 1 item
- frozen orange juice - 1/2 c
- dried chopped apricots - 1 c
How to make apricot bread:
Soak apricots in warm water about 20 minutes. Cream sugar, shortening and egg. Stir in orange juice and 1/4 cup sugar. Sift dry ingredients and mix with creamed mixture. Drain apricots and stir into batter with nuts. Bake at 350° for about 1 hour in greased and floured bread pan.This recipe doubles easily and freezes well.
