  • sugar - 1 c
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • soda - 1/2 tsp
  • baking powder - 2 tsp
  • shortening - 2 Tbsp
  • egg, beaten - 1 item
  • frozen orange juice - 1/2 c
  • dried chopped apricots - 1 c

How to make apricot bread:

Soak apricots in warm water about 20 minutes. Cream sugar, shortening and egg. Stir in orange juice and 1/4 cup sugar. Sift dry ingredients and mix with creamed mixture. Drain apricots and stir into batter with nuts. Bake at 350° for about 1 hour in greased and floured bread pan.

This recipe doubles easily and freezes well.
