Applesauce muffins
Ingredients/Components
- sugar - 1/4 c
- cinnamon - 1 tsp
- milk - 1/4 c
- salt - 1/8 tsp
- egg, slightly beaten - 1 item
- oil - 2 Tbsp
- baking powder
- baking soda - 1/2 tsp
- melted butter - 2 Tbsp
- all-purpose flour
- cooking oil - 1/4 c
- applesauce - 1/2 c
- biscuit mix - 2 c
- mashed banana - 1 c
- nonstick spray coating - 1 item
- slightly beaten egg whites - 2 item
- cinnamon ground - 1/2 tsp
How to make applesauce muffins:
In medium mixing bowl, stir together flour, baking powder, soda, cinnamon and salt. In a large mixing bowl, stir together egg whites, banana, sugar and oil. Stir flour mixture into banana mixture just until moistened.Spray an 8 x 4 x 2-inch loaf pan with nonstick spray coating. Spread batter in prepared pan. Bake in a 350° oven for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
Cool bread in the pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight. Makes 1 loaf (16 servings).
