Applesauce cookies
Ingredients/Components
- eggs - 2 item
- packed brown sugar - 2 c
- salt - 1 tsp
- flour
- soda - 1 tsp
- shortening - 1 c
- raisins - 1 c
- coarsely chopped nuts - 1/2 c
- cold coffee - 1/2 c
- well drained thick applesauce - 2 c
- each: cinnamon, nutmeg and cloves - 1 tsp
How to make applesauce cookies:
Mix shortening, sugar and eggs thoroughly. Stir in coffee and applesauce. Mix in dry ingredients and add raisins and nuts. Chill 2 hours. Drop rounded tablespoonfuls 2 inches apart on lightly greased baking sheet. Bake at 400° for 9 to 12 minutes. If desired, frost when cool with Lemon Butter Icing.
