Apple cheesecake pie
Ingredients/Components
- cinnamon - 1/2 tsp
- pkg - 1 oz
- butter or margarine - 1/4 c
- cornstarch
- water
- nutmeg - 1/4 tsp
- flaked coconut - 1/2 c
- egg - 1 item
- lemon juice - 2 Tbsp
- orange juice - 2/3 c
- sugar, divided - 1 c
- grated orange rind, divided - 1 tsp
- almonds or pecans, chopped - 1/2 c
- thick apple slices - 3 c
- deep 9-inch pie shell, baked - 1 item
How to make apple cheesecake pie:
Combine 2/3 cup sugar, 1/2 teaspoon orange rind, cinnamon, nutmeg, orange juice and butter in large saucepan; bring to boil, stirring until sugar dissolves. Add apples and simmer just until tender and translucent, about 8 minutes. Dissolve cornstarch in water; stir into apple mixture. Cook, stirring, until mixture boils and thickens. Add lemon juice. Cool to room temperature. Spoon into baked pie shell. Whip the cream cheese until fluffy; gradually add 1/3 cup sugar and 1/2 teaspoon orange rind. Beat in egg. Spoon over apples; top with almonds and coconut. Bake at 350° for 20 minutes or until golden. Chill before serving. Yield: 6 servings.Recipe categories: Cheesecake, Desserts, Cheese.
