Ingredients/Components

  • sugar - 1 tsp
  • salt - 2 tsp
  • garlic powder - 1/4 tsp
  • chopped onions - 1 c
  • oregano - 1 tsp
  • basil - 1/2 tsp
  • Italian seasoning - 1 tsp
  • each - 2 cans
  • Italian sweet or hot sausage casings removed - 1 lb
  • green peppers, cut into 1/2-inch pieces - 2 item
  • zucchini, sliced into 1/2-inch pieces - 2 lb
  • celery, sliced into 1/2-inch pieces - 2 c

How to make zucchini soup:

Brown sausage in a large Dutch oven; drain off fat. Add celery and cook for 10 minutes. Add the rest of the ingredients, except green peppers; cook, covered, for 10 more minutes. Add green peppers before serving, then top with grated cheese (if you like).
