  • sugar
  • cinnamon - 1 Tbsp
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • salt - 1 tsp
  • flour - 3 c
  • eggs, beaten - 2 item
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • honey - 3/4 c
  • shredded zucchini - 2 c

How to make zucchini honey bread:

Combine the first 5 ingredients and sift together. Mix the remaining ingredients together. Add dry ingredients to zucchini mixture and stir just until blended. Spoon into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake at 350° for 1 hour or until wooden pick inserted comes out clean.
