Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 2 tsp
- salt - 2 tsp
- chopped nuts - 1/2 c
- flour - 3 c
- oil - 1 c
- baking soda - 2 tsp
- chocolate chips - 1 c
- shredded zucchini - 2 c
How to make zucchini cupcakes:
Beat eggs until frothy. Add oil, sugar, zucchini and vanilla. Add dry ingredients. Fill paper baking cups 1/2 to 2/3 full with batter. Sprinkle top of batter with sugar and cinnamon. Top each with 3 or 4 chocolate chips. Bake in a 375° oven for 20 minutes. No need to frost. These also freeze well. Makes 36.Recipe categories: Desserts, Cakes, Cupcakes.
